Description
Climate:
After a fairly rainy winter, largely restoring the soil's water reserves, spring was moderately watered and summer was incredibly hot and dry. The vines, despite having suffered from heat and water stress, produced a very good quality harvest in normal quantity.
Soil:
Ideally located in the heart of the Esclans Valley between the Esterel and Maures mountains, the domain benefits from a stony clay-sandstone soil of red color, particularly well drained, which helps producing quality grapes and wines.
Grapes varieties:
Syrah, Cabernet-Sauvignon, Grenache.
The vines selected are 30 years old on average.
Vinification:
This wine is vinified in accordance with the organic wine charter.
After total destemming of the harvest, cold maceration is carried out in stainless steel tanks for 2 to 3 days in order to extract the best of the aromas. Fermentation starts with the addition of selected exogenous yeasts. Fermentation lasts a week at controlled temperature (over 20 ° C). Then, wine is regularly pumped over for an additional 4 to 5 weeks to finish extracting the aromas and tannins sought for this cuvée. The wines are then racked (drop wine) and pressed marc (press wine). The "presses" are partially reintegrated with the drops in order to obtain the desired balance.
The wine thus obtained is put in French barrels for 12 months. The final assembly is carried out before bottling, depending on the tastings.
Tasting:
It is a powerful and full-bodied wine, with complex aromas of black fruit and slightly vanilla, toasted and woody.
This wine is intended to accompany your gourmet meals, meats, spicy dishes and cheeses. It can be enjoyed now but will improve over the next 10 years.
