Description

Climate:

After a well-watered winter, generously restoring the soil and subsoil water reserves, spring was mild no frost or heavy storm.

These climatic conditions allowed a good flowering and a good fruiting. The summer was particularly dry and hot.

The harvest was magnificent.

Soil:

Ideally located in the heart of the Esclans Valley between the Esterel and Maures mountains, the domain benefits from a stony clay-sandstone soil of red color, particularly well drained, which helps producing quality grapes and wines.

Grapes varieties :

Syrah, Mourvèdre, Carignan and Cinsault.

Harvest:

The harvest is launched when the phenolic maturities are at their optimum. Each grape variety is harvested separately plot by plot in order to harvest grapes at perfect maturity.

Vinification :

This wine is vinified in accordance with the organic wine charter.

After total destemming of the harvest, cold maceration is carried out in stainless steel tanks for 2 to 3 days in order to extract the best of the aromas. Fermentation starts with the addition of selected exogenous yeasts. They last a week at controlled temperature (over 20 ° C). Then, wines are regularly pumped over for an additional 3 weeks, finishing extracting the aromas sought for this cuvée. The wines are then racked (drop wine) and pressed marc (press wine). The "presses" are partially reintegrated within the drops in order to obtain the desired balance.

Tasting:

Beautiful dark ruby ​​color with purple reflexions. Nose of black fruit, blackcurrant, elderberry with spicy, liquorice and cocoa notes. Nice mouth with ripe tannins that line the whole palate. Persistent finish with garigue and coffee notes. A wine to taste now and which will further improve for 3 to 5 years.

It is a delicious red that pairs well with your convivial meals (grilled meats, cold meats, cheeses, etc.).
