Description
Climate:
After a well-watered winter, generously restoring the soil and subsoil water reserves, spring was mild. No frost or heavy storm occurred.
These climatic conditions allowed a good flowering. Summer was particularly dry and hot.
The harvest was magnificent.
Soil:
The 43ha domain is located on the edge of the Argens valley, at the foot of the Estérel massif, just 7km from the Mediterranean Sea.
The soils are of Permian origin (270 million years).
They are composed of stony river alluviums, fine sandstones and red micaceous clays.

100% Rolle (Vermentino)
The vines:
This wine is vinified in accordance with the organic wine charter.
The mechanically harvested grapes are placed directly in the inert presses for a maceration of a few hours.
After maceration, pressing is carried out completely in the absence of air. The juices are left to settle for 24 to 48 hours. After settling and re-incorporation of the filtered muds, the juices are stored in the cold for 4 to 5 days before starting the fermentation. Fermentations start with the addition of selected exogenous yeasts. They last one week at controlled temperature (17-18 ° C). Then, the wines are under drawn and stored before blending.
Tasting:
Beautiful shiny robe with green reflections. Elegant and expressive nose with aromas of pear, banana, pineapple. Well balanced, ample mouthfeel without fairly persistent aggressiveness ending with fresh notes of citrus, grapefruit and lime.
Very pleasant wine to drink as an aperitif, on your grilled or steamed fish or white meats, on a grilled octopus or scampi salad with devil sauce.
