Description
Climate:
After a well-watered winter, generously restoring the soil and subsoil water reserves, spring was mild. No frost or heavy storm occurred. These climatic conditions allowed a good flowering. Summer was particularly dry and hot. The harvest was magnificent.
Soil:
The 43ha domain is located on the edge of the Argens valley, at the foot of the Estérel massif, just 7km from the Mediterranean Sea.
The soils are of Permian origin (270 million years).
They are composed of stony river alluviums, fine sandstones and red micaceous clays.
The grappes:
Syrah, Grenache, Cabernet-Sauvignon et Carignan.
The harvest is launched when the phenolic maturities are at their optimum. The grape varieties are harvested separately plot by plot in order to harvest grapes at perfect maturity.
The vines:
This wine is vinified in accordance with the organic wine charter.
After total destemming of the harvest, cold maceration is carried out in stainless steel tanks for 2 to 3 days in order to extract the best of the aromas. Fermentation starts with the addition of selected exogenous yeasts. They last one week at controlled temperature (over 20 ° C). Then, we carry out regular pumping over for an additional 3 weeks, finished extracting the aromas sought for this cuvée. The wines are then racked (drop wine) and marc is pressed (press wine). The "presses" are partially reintegrated with the drops in order to obtain the desired balance.
Tasting:
It’s a delicious and powerful red at the same time. The notes of red and black fruits dominate.
