Château de Vaucouleurs
After a well-watered but particularly mild winter, the vines started to grow very early.
Unhappy on 25 and 26 march 2020, the temperature dropped to -3.5°C.
All the early vines that had started to grow froze, greatly impacting the quantity of the harvest.
The spring was well watered and the summer very dry and hot.
The grapes which did not freeze thus arrived beautifully at maturity.
The 43ha domain is located on the edge of the Argens valley, at the foot of the Estérel massif, just 7km from the Mediterranean Sea.
The soils are of Permian origin (270 million years).
They are composed of stony river alluviums, fine sandstones and red micaceous clays.
Grenache, Cinsault, Syrah et Carignan.
The harvest is launched when the phenolic maturities are at their optimum. The grape varieties are harvested separately plot by plot in order to harvest grapes at perfect maturity.
This wine is vinified in accordance with the organic wine charter.
The mechanically harvested grapes are placed directly in the inert presses for a maceration of a few hours.
After maceration, pressing is carried out completely in the absence of air. The juices are left to settle for 24 to 48 hours. After settling and re-incorporation of the filtered muds, the juices are stored in the cold for 4 to 5 days before starting the fermentation. Fermentations start with the addition of selected exogenous yeasts. They last one week at controlled temperature (17-18 ° C). Then, the wines are under drawn and stored before blending.
Beautiful pale pink robe. Fine and elegant nose of pear, citrus and red fruit, quite complex. Round and fresh mouth, with a beautiful finesse, ending on the same aromas.
It will be perfect as an aperitif and will accompany Mediterranean cuisine very well.
